Kabsa – Spiced Rice with Meat A flavorful dish, often made with chicken or lamb, accompanied by fragrant basmati rice and a blend of aromatic spices.Ingredients :
2 cups basmati rice 500g chicken or lamb
1 large onion, chopped
2 tomatoes, chopped
3 garlic cloves, crushed
1 tsp cumin
1 tsp coriander
1 tsp cinnamon
1 tsp cardamom
1 tsp turmeric
1 tsp black pepper
1 tsp salt
2 cups chicken broth or water
2 tbsp olive oil
½ cup raisins
½ cup toasted almonds
Instructions : Sear the meat: Heat the olive oil in a large pot and brown the meat until golden.
Sauté the veggies: Add onion, garlic, and tomatoes—cook until soft.
Spice it up: Stir in cumin, coriander, cinnamon, cardamom, turmeric, black pepper, and salt.
Cook the rice: Pour in the broth and bring to a boil.
Add basmati rice and simmer until all the liquid is absorbed.
Garnish & serve: Sprinkle with raisins and toasted almonds before serving.
